Ingredients

Chicken Marinade:

¼ cup TRUFF Smoky Jalapeño Aioli

1 tablespoon grainy mustard

1 tablespoon lemon juice

1 pound raw chicken tenders

Avocado Spread:

1 avocado, peeled

2 tablespoons fresh basil, chopped

1 tablespoon fresh dill, chopped

Salt and pepper, to taste

½ sheet of focaccia, quartered and halved (or, 4 focaccia rolls, split)

8 slices bacon, cooked and rained

1 heirloom tomato, sliced

2 cups baby spinach

½ cup TRUFF Smoky Jalapeño Aioli

Chicken, Bacon, Avocado & Focaccia Sandwiches

This is one impressive sandwich! A well-stacked culinary creation of marinated chicken, crisp bacon, herb-infused avocado, pillowy focaccia, and our very own Smoky Jalapeño Aioli. This is not your ordinary aioli! We combined roasted green jalapeños with smoked sea salt and black winter truffles into one flavorful, creamy condiment. We love this aioli so much, we even used it to marinate the chicken! If you like smoky-heat, you’ll love this aioli as well as this sandwich.

Instructions:

  1. To make the marinade, place the aioli, mustard, and lemon juice in a large bowl, whisk to combine. Add the raw chicken tenders and toss to coat. Transfer the seasoned chicken to a sealable container or zipper baggie and refrigerate for a minimum of four hours (best if marinated overnight).

  2. Once marinated, preheat a griddle or grill pan over medium heat. Once hot, add the tenders, and cook for 2 to 3 minutes per side or until golden brown and cooked through. Remove from the pan and set aside to rest.

  3. To make the spread, place the avocado, basil, and dill in a medium bowl. Using a fork, mash until smooth and combined. Season to taste with salt and pepper.

  4. To assemble the sandwiches, spread the avocado mixture over the bottom portions of the split focaccia, and top with the chicken tenders, bacon, tomato slices, and baby spinach. Drizzle the spinach with aioli before capping the sandwiches with the top portions and serving.
