4 slices pumpernickel bread

4 tablespoons salted butter, softened

1 avocado, peeled and mashed

1 avocado, peeled and thinly sliced

4 hard boiled eggs, peeled

⅓ cup pickled red onion, sliced

¼ cup alfalfa sprouts

4 tablespoons crème fraiche

1 tablespoon salmon or trout roe

Drizzle of TRUFF Black Truffle Oil

Elegant Avocado Toast with Truffle

Give your avocado toast an upgrade with this impressive, restaurant-quality version. A combination of both mashed and sliced avocado are topped over buttery toasted slices of pumpernickel. Mimosa-style hard boiled eggs are grated over the avocado and garnished with pickled red onion, earthy alfalfa sprouts, crème fraiche, and salmon roe. Adding to the elegance is a duo of TRUFF ingredients; Black Truffle Oil and Black Truffle Salt. The earthy and aromatic elements of the truffle-infused salt and olive oil pair perfectly with our toast toppings, making for a very memorable meal.

Instructions:

  1. Toast pumpernickel slices until crisp and spread each with a tablespoon of softened butter.

  2. Divide the mashed avocado between the toasted bread slices, spreading out evenly.

  3. Divide the sliced avocado between the toasts.

  4. Using a microplane grater, grate the hardboiled eggs over the toast (one hard boiled egg for each).

  5. Top the toasts with pickled red onion and sprouts. Dollop each with crème fraiche and garnish with the salmon roe.

  6. Before serving, drizzle each toast with truffle oil and season with truffle salt.
