Ingredients

1 butternut squash, halved and scored

1/2 cup TRUFF Spicy Mayonnaise

2 teaspoons fresh sage, chopped

1 teaspoon fresh rosemary, chopped

2 teaspoons fresh thyme, chopped

2 garlic cloves, peeled and minced

2 tablespoons orange juice

1 tablespoon maple syrup

1 tablespoon dijon mustard

Herb & Mayo Butternut Squash

Nothing screams autumn more than squash. While they’re still in season, you’ll want to try out this recipe!

The key to this dish is our delicious herb and mayonnaise marinade. Featuring ingredients like, TRUFF Mayonnaise, sage, rosemary, thyme, and dijon mustard, this spectacular combination coats the squash in a beautiful caramelized crust.

Instructions:

  1. Place TRUFF Spicy Mayonnaise, sage, rosemary, thyme, garlic, orange juice, maple syrup, and mustard in a medium bowl. Whisk to combine the marinade. 
  2. Place the butternut squash in a large casserole dish and coat it in the marinade. 
  3. Cover and refrigerate the squash for one hour. 
  4. Preheat the oven to 400°F. 
  5. Unwrap the squash and place it in the oven. 
  6. Roast the squash for 20 minutes, baste the squash in the pan dripping, and return it to the oven for 15-20 more minutes until caramelized.
