Elegant Avocado Toast with Truffle

Ingredients
4 slices pumpernickel bread
4 tablespoons salted butter, softened
1 avocado, peeled and mashed
1 avocado, peeled and thinly sliced
4 hard boiled eggs, peeled
⅓ cup pickled red onion, sliced
¼ cup alfalfa sprouts
4 tablespoons crème fraiche
1 tablespoon salmon or trout roe
Drizzle of TRUFF Black Truffle Oil
Pinch of TRUFF Black Truffle Salt

Instructions:
Toast pumpernickel slices until crisp and spread each with a tablespoon of softened butter.
Divide the mashed avocado between the toasted bread slices, spreading out evenly.
Divide the sliced avocado between the toasts.
Using a microplane grater, grate the hardboiled eggs over the toast (one hard boiled egg for each).
Top the toasts with pickled red onion and sprouts. Dollop each with crème fraiche and garnish with the salmon roe.
Before serving, drizzle each toast with truffle oil and season with truffle salt.
