Everything Bagel Tostadas:

2 teaspoons olive oil

8 corn tortillas

1 egg, beaten

2 tablespoons everything bagel seasoning

¼ cup heavy cream

1 tablespoon TRUFF Original Hot Sauce

½ teaspoon salt

¼ teaspoon ground cumin

Pinch black pepper

2 teaspoons olive oil

2 salmon fillets, cooked and flaked

1 cup red cabbage, shredded

1 cup canned black beans, drained and rinsed

½ cup pico de gallo

Lime wedges and chopped cilantro, for garnish

Spicy Salmon & Egg Scramble with Everything Bagel Tostadas

Elevate breakfast with this fun and flavorful breakfast tostada, perfect for weekend brunches! A TRUFF-infused egg scramble is studded with flaked salmon and heaped onto crispy, bagel-seasoned tortillas. The zesty, black-truffle hot sauce is the ideal addition to this revamped tostada, pairing perfectly with the creamy eggs. We added red cabbage, black beans, and pico de gallo for some playful texture and taste appeal.

Instructions:

  1. Preheat the oven to 400°F and drizzle a large baking sheet with olive oil.

  2. Place the tortillas on the baking sheet and brush each with egg.

  3. Sprinkle the tortillas with the everything bagel seasoning and place in the oven.

  4. Bake for 10 to 15 minutes or until crispy. Remove from the oven and set aside to cool on a wire rack.

  5. Place eggs, cream, hot sauce, salt, cumin, and pepper in a large bowl, whisk to combine.

  6. Heat olive oil in a large skillet over medium heat. Once hot, add the egg mixture and cook, stirring occasionally, until soft and slightly runny, about 5 minutes.

  7. Add the flaked salmon to the skillet and gently stir to combine with the eggs. Continue cooking until the eggs are fluffy and the salmon has reheated, about 1 minute more.

  8. Divide tostadas between plates and top with the salmon scramble, cabbage, black beans, and pico de gallo.

  9. Serve with lime wedges on the side for a squeeze of citrus.
